Safety & Do Not Grow

While most culinary greens are safe to sprout, proper food safety and seed selection are vital because certain plants produce toxic compounds in their seedling stages. Home growers must avoid growing microgreens from the nightshade family, such as tomatoes, potatoes, eggplants, and peppers, whose early shoots contain dangerous levels of natural alkaloids like solanine. Additionally, steer clear of plants with toxic leaves or seeds, like rhubarb and certain raw beans, while prioritizing certified food-grade, untreated seeds to prevent mold contamination and foodborne illness.

Post-Harvest Storage & Shelf-Life

Maximizing the shelf-life of your freshly harvested microgreens requires careful moisture management and proper refrigeration to keep them crisp for 7 to 10 days. After harvesting, gently keep the greens unwashed until right before consumption, and store them in an airtight container lined with a clean paper towel to absorb excess humidity. Storing your microgreens at a steady temperature between 34°F and 38°F prevents wilting, mold growth, and nutrient degradation, ensuring your harvest stays fresh and flavorful.
